For maximum deliciousness, do this:
What you'll need: 1.5 pounds of chicken breast or chicken thighs (or a combination) and one 14 oz. can of full-fat coconut milk. If you like, include one 14 oz. can of white cannellini beans.
Thaw the Starter Kit. Lightly season your chicken and add it to your slow cooker with the starter kit. Cover and cook on low for 6-7
hours or until the chicken is done. Shred the chicken and return it to the pot. Turn the slow
cooker on high and add your coconut milk and the beans, if you're using them. Cook for 15-20 minutes or until heated
through. Serve warm.
Other suggestions: Garnish with fresh cilantro,
lime wedges, and avocado slices. Try adding a seeded, diced Jalapeno to the
slow cooker with the starter kit for extra spice!
